Recipes & Tips
NO-FRY FALAFELS
1/3 cup bulgur wheat
2 cloves garlic, halved
1 can (19oz/540ml) chickpeas, drained
1 small onion, coarsely chopped
1 cup cubed whole wheat bread
2 Tbsp.
1 tsp.
½ tsp.
¼ tsp.
Dash hot pepper sauce
½ cup fresh parsley, chopped
2 Tbsp.
2 whole wheat pitas
TOPPING:
½ cup plain yoghurt
2 cloves garlic, minced
2 tomatoes, chopped
1 small
4 lettuce leaves
In a bowl, pour
about 2 cups of boiling water over bulgur; let stand for 30 mins. Drain,
squeeze out excess moisture. In food processor, mince garlic. Add

Bake in 400 degree F oven for 20 minutes or until patties are firm, turning halfway through.
Topping: Combine yoghurt, lemon juice and garlic; set aside. Cut each pita in half and open to form a pouch. Nestle each patty into pouch along with tomatoes, onion and lettuce. Drizzle with sauce.
