Spring Blast Fair Updates:

Recipes & Tips 

NO-FRY FALAFELS 

1/3 cup bulgur wheat

2 cloves garlic, halved

1 can (19oz/540ml) chickpeas, drained

1 small onion, coarsely chopped

1 cup cubed whole wheat bread

2 Tbsp. lemon juice

1 tsp. ground cumin

½ tsp. ground coriander

¼ tsp. each salt and pepper

Dash hot pepper sauce

½ cup fresh parsley, chopped

2 Tbsp. vegetable oil

2 whole wheat pitas

TOPPING:

½ cup plain yoghurt

2 cloves garlic, minced

2 tomatoes, chopped

1 small onion sliced

4 lettuce leaves 

In a bowl, pour about 2 cups of boiling water over bulgur; let stand for 30 mins. Drain, squeeze out excess moisture. In food processor, mince garlic. Add bulgur, chick peas, onion, bread, lemon juice, cumin, coriander, salt and pepper and hot pepper sauce; puree for 1 minute or until smooth.  Blend in parsley. 

Scoop 12 mounds, each ¼ cup, bulgur mixture onto well-greased baking sheet; flatten into patties about ½ inch (mixture will be sticky).

Bake in 400 degree F oven for 20 minutes or until patties are firm, turning halfway through.

Topping: Combine yoghurt, lemon juice and garlic; set aside. Cut each pita in half and open to form a pouch. Nestle each patty into pouch along with tomatoes, onion and lettuce. Drizzle with sauce.
